Black Teas
​
Black Assam - This is a quintessential black tea. Rich and malty, with a tart finish and a wonderful amber colour. It is stocked with caffeine, antioxidants,
vitamin B1 and a brisk, peppy flavour.
Origin: Sri Lanka and India
Ingredients: an organic blend of orange pekoe leaves.
Serving suggestion: add 1-2 teaspoons and brew in 90-95 degree water for 1 minute. Serve with milk and sugar to taste.
Caramel Masala Chai - Premium organic Assam tea from the best plantations in India is mixed with spices like cinnamon, cardamom, cloves and star anise, then infused with toffee-ish caramel. The result is a spicy, creamy chai with just the right sweetness.

Ingredients: Assam black tea, cinnamon, star anise, cardamom, cloves, ginger, black peppercorn, and natural flavour.
Serving suggestion: here at The Dragonfly Tea Atelier, we have the option to brew in milk or just water. We brew the tea in approximately 250-300ml of milk or water for 3 minutes at 80 degrees. Strain and serve, or you can chill over ice.
Dark Roast Oolong - Savour the flavour of history with this heavily, yet delicately roasted tea. Offering a deep and rich taste with a visibly dark colour and strong character, Dark Roast Oolong tea originates from China and is harvested year-round. Civilisations have enjoyed Oolong tea for centuries as a natural immune booster.

Serving suggestion: Brew 1-2 teaspoons of leaves in freshly boiled water (100 degrees) for 1-5 minutes depending on how weak or strong you want your tea.
Darjeeling - This tea is frequently called the “Champagne of teas” with musky sweet tasting notes similar to Muscat wine. But it can also have delicate vegetal, mossy, fruity and citrusy flavours. This first flush grade is fresh and clean with a golden yellow hue.

Serving Suggestion: Brew 1-2 teaspoons in freshly heated water (90 degrees) for 5 minutes.
Decaffeinated Black Tea - A full-leaf certified organic black tea which has been decaffeinated by carbon dioxide. This is the only natural method of decaffeination that allows the retention of the tea flavours, and health benefits and is the only method allowed in certified organic products. It is perfect for those who want a cup in the evening or those who are sensitive to the effects of caffeine.

Serving Suggestion: Brew 1-2 teaspoons in boiling water (100 degrees) for 10 minutes. Add milk and/or sugar to taste.
English Breakfast - the familiar favourite is a blend of organic Ceylon black tea leaves. Traditionally robust and dark ruby red in colour, this is the most consumed breakfast tea in Western countries.

French Earl Grey - a symphony of flowers and bergamot dancing on your palate. This tea is the classic Earl Grey with a twist which is oh-so-fruity! A medium-bodied black tea base with pretty petals and notes of fruit that play with classic bergamot in an inspiring, bold, and refined infusion.

House Blend Caravan: This medium-strength tea starts slightly smokey without any hint of bitterness and ends with a sweet slightly floral flavour, leaving you longing for that second (or even third) cup.

Serving Suggestion: Brew 1-2 teaspoons in 90-degree water for 1-2 minutes and enjoy with a dash of milk and/or sugar.
Iron Goddess Of Mercy - Also known as Tieguanyin, this Oolong is difficult to produce, but effort is rewarded with a beautifully light green Oolong tea reminiscent of flowers. After infusing the leaves the first time, having woken up the leaves, every infusion after the first, will reveal many different layers of flavours on the palate.

Serving suggestion: Wash/rinse 1 tablespoon of tea leaves with 80-degree water. Then steep the same leaves in 80-degree water for up to 2 minutes. (This helps release the flavours and give you a rich mouthful of Tieguanyin)
Keemun - This tea has long been cherished as one of the finest black teas on the planet, grown at low temperatures with high humidity in Chinas Anhui and Jiangxi provinces. It has a distinct floral flavour and aroma, with deliciously fruity undertones complemented by hints of orchid, pine, and dried plum.

Serving suggestion: Brew 1-2 teaspoons in 90-95-degree water for 3 minutes. Don’t over-steep, or you’ll lose that special Keemun fragrance.
Lapsang Souchong: Traditionally, Lapsang Souchong is grown in the Fujian province of China. The ‘Souchong’ refers to the fourth and fifth leaves of the plant, which are coarser and less aromatic than the pekoe buds. The tea is double-smoked over natural local pinewood embers that leave a clean, smokey/woody flavour.

Serving suggestion: Brew 1 teaspoon in 90-95 degree water for 2-3 minutes. Adjust the steep time for extra or less flavour.
Persian Apple: This warming tea blend is naturally sweet with a beautiful rose aroma. Rich with antioxidants, this wearying blend improves circulation and balances blood sugar.

Serving Suggestion: Brew 1 teaspoon in boiling water for 3-4 minutes.
Pu-erh Tea: This fermented tea is traditionally made in China's Yunnan province, and is believed to have been consumed for almost 5000 years. It is also said to introduce beneficial bacteria and probiotics into the gut and also encourages blood sugar control. This tea undergoes a “wet piling” process, making the tea nuggets palatable and smooth. The result is a sweet and floral tea with earthy undertones that some describe as woody.

Serving Suggestion: Steep 1-2 teaspoons in freshly boiled water (100 degrees) and let steep for 2-5 minutes. This tea can also be steeped multiple times releasing new flavours every time.
Strong Earl Grey: A heavenly blend of black tea with natural bergamot oils gives a depth of flavour that can only be classed as bold and refined. A refreshing flavour to kick start your metabolism and taste buds.

Tumeric Chai - This spiced chai is dynamite. The fragrance of cloves, cardamom and star anise, plus a double dose of immune-boosting curcumin, topped with notes of orange and peppery ginger is like sunshine in a bowl! Garnish with a pinch of pepper for extra zing!

Ingredients: Organic Black Tea, cinnamon, cardamom, cloves, ginger, star anise, turmeric and black pepper corn.
Serving suggestion: Brew 2 heaped teaspoons to 1 cup of milk. Simmer on low heat for 5 minutes (don’t let it boil). Strain off milk into a cup. Sweeten with honey to the desired taste.

Green Teas
Chinese Chun Mee Green Tea - Sometimes known as ‘Precious Eyebrows Tea’, this tea is an unfermented green tea, originally grown in Jiangxi province, but these days you can find it all over China. The flavour is a little sharper than other green teas: bright, toasty and slightly tangy, with a lingering sweetness to round out an even profile. Like all green tea, Chun Mee is packed with anti-ageing properties, antioxidants and cancer-fighting polyphenols. Being unfermented, those vitamins stay locked inside the leaf. It’s the perfect after-dinner palate cleanser.

Serving Suggestion: Brew 1-2 teaspoons in 90-95-degree water for 2 minutes. The tea should be a beautiful, clear yellow.
Genmaicha - Japanese Genmaicha is blended with toasted rice kernels, so you get the grassy sweetness of green Sencha, plus the nutty popcorn-esque cosiness of brown rice. Some green teas can be bitter and sharp, but Genmaicha tea is mellow and warm, stacked with healing antioxidants like carotenoids and ascorbic acid. It’s as close as tea gets to a big bowl of chicken soup. Easy on the tummy, soothing on the soul.

Serving Suggestion: Brew 1-2 teaspoons in 75-80-degree water and steep until the brew turns a sunshine yellow colour.
Gyokuro - Organic cultivation of Gyokuro in Japan is relatively rare and as such this tea is regarded as extremely precious and special. Gyokuro is a special type of green tea shaded from the sun for 20 days with specially made mats which allows the caffeine levels to increase in the leaves, in addition to allowing the amino acids to get stronger, producing a sweeter and stronger flavour.

Jasmine Green Tea - A wonderfully floral and fragrant tea made with certified organic green tea, infused with natural Jasmine flowers. Sencha Green Tea - This tea is the most popular tea in Japan. In general, Sencha is green-tinged with yellow, with a fresh herbal or grassy flavour with a well-balanced combination of aroma, umami and bitterness, providing you with a feeling of luxury that increases with the grade of green tea.

Cold and Flu Tea - Designed to assist your immune system by providing a nourishing kick of blended herbs, our organic Cold and Flu tea tisane is both beneficial and delicious. A mix of berry, mint and heat with a touch of zesty Australian-grown Lemon Myrtle should have you feeling better in no… Thyme. Elderberries are packed with vitamin C and powerful antioxidants. Matcha - Handpicked in Nishio by venerable Japanese tea masters, this tea is perfect for tea ceremonies and very special occasions. You can always spot proper Japanese Matcha because of its luminous and vibrant green colouring, the texture silky and smooth, and the flavour should ping and zip around the palate. Japanese Matcha is sweet and savoury with a hefty whomp of Umami and is very smooth on the finish.

Silver Needle White Tea (Fujian) - Also known as Baihao Yinzhen, this tea is widely regarded as the finest white tea in the world. It is made from the unopened, young silver buds of Camelia Sinesis, and is only harvested for two days each year. The Chinese call this the 'Imperial Harvest'. Silver Needle Tea has a very distinctive aroma, like freshly cut hay. It's mellow, sweet and delicate, similar to white peony tea, with a pale yellow liquor that glitters in the sunlight.

Serving Suggestion: Brew 2-3 teaspoons in 75-85-degree water and let steep for 5 minutes.

White Peony Tea - Also known as Pai Mu Tan, this tea is one of China's most famous natural teas (it's technically the second finest white tea, after Silver Needles) but it isn't simple to grow. Each silvery bud is plucked from the Da Bai or Narcissus tea bush and once the tiny leaves are beginning to open, you've got just 48 hours to pick the crop. Harvest too late and you lose that subtle elegance, the light floral touch that makes White Peony tea so renowned. It's a fruity, refreshing tea, although some bushes do produce a darker, nuttier yield. High levels of antioxidants and polyphenols make White Peony a real immune booster.
